Italian sparkling wine Joyful Rosso Mosso is intense and bright, benefiting from the best Sicilian red grapes. The stunning, sun-kissed countryside of south-eastern Sicily is the prime area for these ancient varieties, whose origins go back to the dawn of time. Here, rich soils of sand, clay and calcareous tuff yield a delicately grapey, fruity and floral nectar.
Fermentation with maceration is carried out with indigenous yeasts found on the grapes, in small stainless-steel containers at a controlled temperature of 24°C (80 °F). The wine is left to slowly referment at a low temperature and is bottled with a light residual of natural carbon dioxide.
The colour is bright ruby red, enlivened by fine and persistent bubbles that carry rich, fruity aromas of strawberry, raspberry and blue flowers, like iris and violet, to the nose. The palate, in addition to the bubbles, is sleeked with soft, clean tannins that stimulate the sensation of balance on the finish.
Zest and minerality raise this wine to food-friendly status. In fact, it is flexible, perfect for pastas, soups and risottos, especially from Ragusa, Sicily where fish soup and vegetable couscous are on the menu. But it also goes well with other marvels from traditional regional Italian cuisine, made with meat, and even fish!
