As for how it is made, since it comes from inherently unrestrained grapes, it lends itself well to natural vinification, benefiting from wild yeasts found on the grapes after harvest. Refermentation takes place at a low temperature in stainless steel, which today is considered perfect for stabilizing aromas.
So, for every bottle whose main characteristic is effervescence, the most delicate moment is when the wine is bottled. This one is bottled with a light residual natural carbon dioxide, and stays in bottle for three months before going on the market.
