Moreover, this colour is symbolic of the spirit of our times, because pink is as current as bubbles. Not just the colour, but the aromas lend themselves well to exploration: nuances of crisp fruit and an unexpected depth, thanks to undertones that are explicitly balsamic.
Whole grapes are pressed well and the pink juice is fermented with wild yeasts from the grape skins. The only requirement other than small stainless-steel containers is the temperature, which must be around 16°C (61 °F). In this case, fermentation is as slow and as natural as possible. At the end, the wine is bottled with its natural carbon dioxide.
What we get is a soft rose wine with brilliant reflections, a fine and persistent perlage that emanates unique aromas of wild strawberries, raspberries, smoky rose, aromatic herbs and fresh scents like mint.
The palate is ample, soft and truly nervy with its pleasant freshness, making it the ideal companion for international recipes as well as Italian recipes with a highly Mediterranean touch, such as a Margherita or Marinara pizza or any dish with tomato, basil or rosemary, and even raw fish.
